Mini Spicy Thai Coconut Soup Mix
Available in large (makes 8 cups) and mini (makes 4 cups)

Preparation Instructions – Items needed:
- One half of a 13 oz. can of Coconut Milk
- Fresh squeezed lime juice
Add contents of soup package to 4 cups water. Bring to a boil, then reduce and simmer for 30 to 45 minutes, until vegetables are tender. Stir in 1/2 of a 13 oz can of coconut milk and cook for 2-3 minutes longer, or until thoroughly heated, stirring frequently.
Put in bowls and add fresh squeezed lime juice to taste. This is the key to a delicious Thai soup! Make a meal out of your soup by pouring over cooked Thai/rice noodles or noodles of your choice.
Consider adding fresh diced cooked chicken. Optional toppings may include fresh chopped cilantro or chopped peanuts.
